Ingredients

  • Cauliflower - 1 medium head
  • Unsalted butter - 4 tablespoons (56g)
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Smoked paprika - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves from the cauliflower and slice it into 2.5cm (1 inch) thick steaks.
  3. In a small saucepan, melt the butter over low heat and add the minced garlic, cooking for about 1 minute until fragrant. Remove from heat.
  4. In a large bowl, combine the olive oil, smoked paprika, ground cumin, dried thyme, salt, and black pepper.
  5. Add the cauliflower steaks to the bowl and brush both sides with the spice mixture evenly.
  6. Place the seasoned cauliflower steaks on a baking sheet lined with parchment paper.
  7. Drizzle the garlic butter over the top of each cauliflower steak.
  8. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is golden brown and tender.
  9. Remove from the oven and garnish with fresh parsley before serving.
