- Cauliflower - 1 medium head
- Unsalted butter - 4 tablespoons (56g)
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Smoked paprika - 1 teaspoon
- Ground cumin - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Remove the leaves from the cauliflower and slice it into 2.5cm (1 inch) thick steaks.
- In a small saucepan, melt the butter over low heat and add the minced garlic, cooking for about 1 minute until fragrant. Remove from heat.
- In a large bowl, combine the olive oil, smoked paprika, ground cumin, dried thyme, salt, and black pepper.
- Add the cauliflower steaks to the bowl and brush both sides with the spice mixture evenly.
- Place the seasoned cauliflower steaks on a baking sheet lined with parchment paper.
- Drizzle the garlic butter over the top of each cauliflower steak.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is golden brown and tender.
- Remove from the oven and garnish with fresh parsley before serving.
