  • Unsalted butter - 4 tablespoons (56 grams)
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons (30 milliliters)
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon (5 grams)
  • Black pepper - 1/2 teaspoon (2 grams)
  • Lemon juice - 1 tablespoon (15 milliliters)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Remove the leaves from the cauliflower and trim the stem, then slice the cauliflower head into 1.5 cm (0.6 inch) thick steaks.
  3. In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. In a large bowl, combine the roasted cauliflower steaks with olive oil, salt, and black pepper. Toss gently to coat each steak evenly.
  5. Place the cauliflower steaks on a baking sheet lined with parchment paper. Brush the garlic butter mixture generously over each steak.
  6. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is tender and golden brown.
  7. Remove from the oven and drizzle with lemon juice and sprinkle with chopped parsley before serving.
