- Chicken breast - 300 grams, diced
- Quinoa - 100 grams, rinsed
- Lentils - 100 grams, cooked
- Chickpeas - 100 grams, canned, drained and rinsed
- Broccoli - 100 grams, chopped
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Garlic - 4 cloves, minced
- Butter - 50 grams
- Olive oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, add 200 ml of water and bring to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is fluffy.
- While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and black pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Then, add the chopped broccoli, sliced bell pepper, and julienned carrot. Stir-fry for another 5 minutes until the vegetables are tender but still crisp.
- Stir in the cooked lentils and chickpeas into the skillet, mixing everything well. Add the butter and soy sauce, stirring until the butter has melted and everything is well coated. Cook for an additional 2-3 minutes.
- Fluff the cooked quinoa with a fork and serve it on plates. Top each serving with the garlic butter chicken and vegetable stir-fry. Garnish with fresh parsley and enjoy!
