Ingredients
- Boneless chicken breasts - 300 grams
- Long-grain white rice - 1 cup (200 grams)
- Chicken broth - 2 cups (480 ml)
- Garlic - 4 cloves, minced
- Butter - 50 grams
- Broccoli florets - 1 cup (150 grams)
- Carrot, sliced - 1 medium
- Bell pepper, diced - 1 medium
- Onion, diced - 1 small
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried thyme - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat and add the diced onion and garlic, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the sliced carrot, bell pepper, and broccoli to the skillet. Cook for an additional 5 minutes, stirring occasionally until the vegetables are slightly tender.
- Remove the vegetables from the skillet and set aside. In the same skillet, melt the butter and add the chicken breasts, seasoning with salt, black pepper, and thyme. Cook for about 5-7 minutes on each side until golden brown and cooked through.
- While the chicken is cooking, rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and chicken broth, and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- Once the chicken is fully cooked, remove it from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
- In a large mixing bowl, combine the cooked rice, sautéed vegetables, and sliced chicken. Mix well and transfer the mixture into a greased casserole dish.
- Cover the casserole dish with aluminum foil and bake in the preheated oven for 15-20 minutes to allow the flavors to meld together.
- Remove from the oven, garnish with fresh parsley, and serve hot.
