- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Garlic - 4 cloves, minced
- Butter - 3 tablespoons (45 grams)
- Olive Oil - 1 tablespoon (15 ml)
- Vegetable Broth - 2 cups (480 ml)
- Salt - 1 teaspoon (5 grams)
- Black Pepper - 1/2 teaspoon (2 grams)
- Dried Thyme - 1 teaspoon (1 gram)

Steps
- Preheat the oven to 190°C (375°F).
- In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced chicken thighs to the skillet and season with salt, pepper, and thyme. Sauté until the chicken is browned on all sides, about 5-7 minutes.
- Stir in the diced carrot and zucchini, cooking for an additional 3-4 minutes until slightly softened.
- In a large mixing bowl, combine the cooked rice, chickpeas, lentils, and the sautéed chicken and vegetables. Pour in the vegetable broth and mix well.
- Transfer the mixture to a greased 9x9-inch (23x23 cm) casserole dish, spreading it evenly.
- Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the top is slightly golden and bubbling.
- Remove from the oven, let it cool for a few minutes, then garnish with fresh parsley before serving.
