  • Chicken breast - 300 grams, cubed
  • Broccoli florets - 100 grams
  • Carrot - 1 medium, sliced
  • Zucchini - 1 small, diced
  • Garlic - 4 cloves, minced
  • Butter - 50 grams
  • Olive oil - 1 tablespoon
  • Chicken broth - 120 ml
  • Kosher salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and add the cubed chicken. Season with kosher salt, black pepper, and dried thyme. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and cook for an additional 1-2 minutes until fragrant, then remove from heat.
  4. In a large mixing bowl, combine the cooked chicken, broccoli, carrot, zucchini, chicken broth, and half of the butter (25 grams) cut into small pieces. Mix well.
  5. Transfer the mixture into a greased casserole dish and evenly distribute it.
  6. Dot the top with the remaining butter and sprinkle with grated Parmesan cheese.
  7. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the top is golden and bubbly.
  8. Remove from the oven, let it cool for a few minutes, and garnish with chopped fresh parsley before serving.
