- Boneless chicken thighs - 300g
- Butter - 50g
- Garlic cloves - 4, minced
- Chicken broth - 250ml
- Long-grain white rice - 150g
- Onion - 1 small, diced
- Parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- Heat the olive oil and 25g of butter in a large skillet over medium heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Season the chicken thighs with salt and pepper, then add them to the skillet, cooking for about 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the rice and toast it for about 2 minutes, stirring frequently.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and has absorbed the liquid.
- While the rice is cooking, melt the remaining 25g of butter in the skillet, then return the chicken to the pan to coat it in the garlic butter sauce.
- Once the rice is done, fluff it with a fork and serve it on plates topped with the garlic butter chicken.
- Garnish with chopped parsley before serving.
