Ingredients

  • Chicken breast - 300 grams
  • Quinoa - 1 cup (185 grams)
  • Garlic - 4 cloves, minced
  • Butter - 2 tablespoons (28 grams)
  • Olive oil - 1 tablespoon (15 ml)
  • Chicken broth - 2 cups (480 ml)
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine the rinsed quinoa and chicken broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. While the quinoa is cooking, season the chicken breast with salt and black pepper.
  4. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.
  5. Add the seasoned chicken breast to the skillet and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the remaining 1 tablespoon of butter and the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  7. Return the chicken to the skillet, add the lemon juice, and toss to coat in the garlic butter sauce. Cook for an additional 2 minutes.
  8. Fluff the cooked quinoa with a fork and stir in the chopped parsley.
  9. Serve the garlic butter chicken over a bed of quinoa and garnish with extra parsley if desired.
