- Chicken breast - 300 grams
- Quinoa - 1 cup (185 grams)
- Garlic - 4 cloves, minced
- Butter - 2 tablespoons (28 grams)
- Olive oil - 1 tablespoon (15 ml)
- Chicken broth - 2 cups (480 ml)
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
Steps
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, combine the rinsed quinoa and chicken broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the quinoa is cooking, season the chicken breast with salt and black pepper.
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.
- Add the seasoned chicken breast to the skillet and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of butter and the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Return the chicken to the skillet, add the lemon juice, and toss to coat in the garlic butter sauce. Cook for an additional 2 minutes.
- Fluff the cooked quinoa with a fork and stir in the chopped parsley.
- Serve the garlic butter chicken over a bed of quinoa and garnish with extra parsley if desired.
