Ingredients

  • Whole wheat tortillas - 2 pcs
  • Hummus - 100 grams
  • Cucumber - 1 medium, thinly sliced
  • Red bell pepper - 1 medium, thinly sliced
  • Carrot - 1 medium, shredded
  • Spinach leaves - 50 grams
  • Avocado - 1 small, sliced
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a small bowl, mix the olive oil, lemon juice, salt, and black pepper to create a dressing.
  2. Lay the whole wheat tortillas flat on a clean surface.
  3. Spread 50 grams of hummus evenly on each tortilla.
  4. Layer the spinach leaves, cucumber slices, red bell pepper slices, shredded carrot, avocado slices, and crumbled feta cheese evenly on top of the hummus.
  5. Drizzle the dressing over the vegetables.
  6. Carefully roll the tortillas tightly from one end to the other, tucking in the sides as you go to keep the filling inside.
