- Almond flour - 100 grams
- Coconut oil - 30 grams (melted)
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Greek yogurt - 200 grams (plain, non-fat)
- Honey - 1 tablespoon (for custard)
- Cornstarch - 1 tablespoon
- Fresh mixed berries (strawberries, blueberries, raspberries) - 150 grams
- Kiwi - 1 (sliced)
- Mint leaves - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, honey, and vanilla extract until a dough forms.
- Press the dough evenly into the bottom and sides of a tart pan. Prick the bottom with a fork to prevent bubbling.
- Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove and let it cool completely.
- In another bowl, mix Greek yogurt, honey, and cornstarch until smooth to create the custard.
- Spread the yogurt mixture evenly over the cooled tart crust.
- Arrange the fresh berries and kiwi slices artistically on top of the custard.
- Chill the tart in the refrigerator for at least 15 minutes before serving.
- Garnish with mint leaves just before serving.
