Ingredients

  • Almond flour - 100 grams
  • Coconut oil - 30 grams (melted)
  • Honey - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Greek yogurt - 200 grams (plain, non-fat)
  • Honey - 1 tablespoon (for custard)
  • Cornstarch - 1 tablespoon
  • Fresh mixed berries (strawberries, blueberries, raspberries) - 150 grams
  • Kiwi - 1 (sliced)
  • Mint leaves - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, honey, and vanilla extract until a dough forms.
  3. Press the dough evenly into the bottom and sides of a tart pan. Prick the bottom with a fork to prevent bubbling.
  4. Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove and let it cool completely.
  5. In another bowl, mix Greek yogurt, honey, and cornstarch until smooth to create the custard.
  6. Spread the yogurt mixture evenly over the cooled tart crust.
  7. Arrange the fresh berries and kiwi slices artistically on top of the custard.
  8. Chill the tart in the refrigerator for at least 15 minutes before serving.
  9. Garnish with mint leaves just before serving.
