Ingredients

  • All-purpose flour - 120 grams
  • Unsalted butter - 60 grams, chilled and cubed
  • Granulated sugar - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Ice water - 3 tablespoons
  • Mixed seasonal fruits (e.g., peaches, berries, apples) - 300 grams, sliced
  • Brown sugar - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Egg - 1, beaten (for egg wash)
  • Turbinado sugar - 1 tablespoon (for sprinkling)

Steps

  1. In a mixing bowl, combine the flour, granulated sugar, and salt.
  2. Add the chilled butter cubes and mix using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
  4. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat the oven to 200°C (400°F).
  6. In a separate bowl, toss the sliced fruits with brown sugar, cinnamon, and lemon juice. Set aside.
  7. On a lightly floured surface, roll out the dough into a 12-inch circle and transfer it to a parchment-lined baking sheet.
  8. Place the fruit mixture in the center of the dough, leaving a 2-inch border.
  9. Fold the edges of the dough over the fruit, pleating it as necessary to create a rustic look.
  10. Brush the dough with the beaten egg and sprinkle turbinado sugar over the crust.
  11. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the fruit is bubbly.
  12. Allow the galette to cool for a few minutes before slicing and serving warm.
