- Almonds, chopped - 1/2 cup
- Walnuts, chopped - 1/2 cup
- Pumpkin seeds - 1/4 cup
- Dried cranberries - 1/4 cup
- Dried apricots, chopped - 1/4 cup
- Honey or maple syrup - 1/4 cup
- Coconut oil, melted - 2 tablespoons
- Cinnamon - 1 teaspoon
- Salt - 1/4 teaspoon
Steps
- Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the gluten-free rolled oats, chopped almonds, chopped walnuts, and pumpkin seeds.
- In a separate small bowl, whisk together the honey (or maple syrup), melted coconut oil, cinnamon, and salt until well combined.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the granola mixture evenly onto the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let it cool completely on the baking sheet.
