- Large Eggs - 4
- Fresh Spinach - 100 grams
- Onion - 1 small, diced
- Garlic - 1 clove, minced
- Olive Oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Feta Cheese - 50 grams, crumbled
- Fresh Parsley - 1 tablespoon, chopped (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a medium oven-safe skillet, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a bowl, whisk together the eggs, salt, and black pepper until well combined.
- Pour the egg mixture over the spinach and onion in the skillet, making sure it's evenly distributed.
