  • Large Eggs - 4
  • Fresh Spinach - 100 grams
  • Onion - 1 small, diced
  • Garlic - 1 clove, minced
  • Olive Oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Feta Cheese - 50 grams, crumbled
  • Fresh Parsley - 1 tablespoon, chopped (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium oven-safe skillet, heat the olive oil over medium heat.
  3. Add the diced onion and sauté for about 3-4 minutes until softened.
  4. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  5. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  6. In a bowl, whisk together the eggs, salt, and black pepper until well combined.
  7. Pour the egg mixture over the spinach and onion in the skillet, making sure it's evenly distributed.
  8. Sprinkle the crumbled feta cheese on top of the egg mixture.
  9. Cook on the stovetop for 2-3 minutes until the edges begin to set.
  10. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is fully set and slightly golden on top.
