  • Kale - 50 grams, chopped
  • Zucchini - 100 grams, diced
  • Green onions - 2, sliced
  • Garlic - 1 clove, minced
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, whisk the eggs with salt and black pepper until well combined.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the diced zucchini and cook for 3-4 minutes until slightly softened.
  5. Stir in the chopped spinach and kale, cooking for another 2-3 minutes until wilted.
  6. Remove the skillet from heat and add the sliced green onions and feta cheese to the vegetable mixture.
  7. Pour the whisked eggs evenly over the vegetables in the skillet, gently stirring to combine.
  8. Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the frittata is set and lightly golden on top.
  9. Once done, remove from the oven and let it cool for a few minutes before slicing.
