- Zucchini - 100 grams, diced
- Green onions - 2, sliced
- Garlic - 1 clove, minced
- Feta cheese - 50 grams, crumbled
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, whisk the eggs with salt and black pepper until well combined.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the diced zucchini and cook for 3-4 minutes until slightly softened.
- Stir in the chopped spinach and kale, cooking for another 2-3 minutes until wilted.
- Remove the skillet from heat and add the sliced green onions and feta cheese to the vegetable mixture.
- Pour the whisked eggs evenly over the vegetables in the skillet, gently stirring to combine.
- Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the frittata is set and lightly golden on top.
