Ingredients
- Large eggs - 4
- Spinach - 100 grams, chopped
- Cherry tomatoes - 100 grams, halved
- Red bell pepper - 50 grams, diced
- Onion - 50 grams, finely chopped
- Feta cheese - 50 grams, crumbled
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - a handful, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
- In a 20 cm (8 inch) oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the diced red bell pepper and sauté for an additional 2 minutes.
- Add the chopped spinach and halved cherry tomatoes to the skillet, cooking until the spinach wilts, about 2-3 minutes.
- Pour the whisked eggs evenly over the vegetables in the skillet. Sprinkle the crumbled feta cheese and chopped basil on top.
- Cook on the stovetop for 2-3 minutes until the edges start to set, then transfer the skillet to the preheated oven.
- Bake for 10-12 minutes or until the frittata is set and slightly golden on top.
- Remove from the oven and let it cool for a couple of minutes before slicing into wedges. Serve warm.
