Ingredients

  • Large eggs - 4
  • Spinach - 100 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 50 grams, diced
  • Onion - 50 grams, finely chopped
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
  3. In a 20 cm (8 inch) oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the diced red bell pepper and sauté for an additional 2 minutes.
  5. Add the chopped spinach and halved cherry tomatoes to the skillet, cooking until the spinach wilts, about 2-3 minutes.
  6. Pour the whisked eggs evenly over the vegetables in the skillet. Sprinkle the crumbled feta cheese and chopped basil on top.
  7. Cook on the stovetop for 2-3 minutes until the edges start to set, then transfer the skillet to the preheated oven.
  8. Bake for 10-12 minutes or until the frittata is set and slightly golden on top.
  9. Remove from the oven and let it cool for a couple of minutes before slicing into wedges. Serve warm.
