- Brown rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Cooked chicken breast, diced - 150 grams
- Green peas, frozen - 100 grams
- Carrot, diced - 1 medium
- Red bell pepper, diced - 1/2
- Garlic, minced - 2 cloves
- Onion, diced - 1 small
- Soy sauce - 2 tablespoons
- Eggs - 2, beaten
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Green onions, sliced - for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then combine it with 2 cups of water in a pot and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes until the rice is cooked and water is absorbed.
- In a large skillet, heat olive oil over medium heat and add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and red bell pepper to the skillet, cooking for another 5 minutes until they begin to soften.
- Stir in the cooked chicken breast and frozen green peas, cooking for an additional 3-4 minutes until heated through.
- Push the vegetable and chicken mixture to one side of the skillet and pour in the beaten eggs on the other side. Scramble the eggs until fully cooked.
- Combine the rice with the mixture in the skillet, then add soy sauce, black pepper, and salt to taste. Stir everything together and cook for another 2-3 minutes until well mixed.
- Serve hot, garnished with sliced green onions.
