Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Cooked chicken breast, diced - 150 grams
  • Green peas, frozen - 100 grams
  • Carrot, diced - 1 medium
  • Red bell pepper, diced - 1/2
  • Garlic, minced - 2 cloves
  • Onion, diced - 1 small
  • Soy sauce - 2 tablespoons
  • Eggs - 2, beaten
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Green onions, sliced - for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then combine it with 2 cups of water in a pot and bring to a boil.
  2. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes until the rice is cooked and water is absorbed.
  3. In a large skillet, heat olive oil over medium heat and add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  4. Add the diced carrot and red bell pepper to the skillet, cooking for another 5 minutes until they begin to soften.
  5. Stir in the cooked chicken breast and frozen green peas, cooking for an additional 3-4 minutes until heated through.
  6. Push the vegetable and chicken mixture to one side of the skillet and pour in the beaten eggs on the other side. Scramble the eggs until fully cooked.
  7. Combine the rice with the mixture in the skillet, then add soy sauce, black pepper, and salt to taste. Stir everything together and cook for another 2-3 minutes until well mixed.
  8. Serve hot, garnished with sliced green onions.
