  • Cooked white rice - 2 cups
  • Vegetable oil - 2 tablespoons
  • Carrot, diced - 1 medium
  • Green bell pepper, diced - 1/2 cup
  • Frozen peas - 1/2 cup
  • Green onion, sliced - 2 stalks
  • Garlic, minced - 2 cloves
  • Soy sauce (low sodium) - 3 tablespoons
  • Eggs - 2 large
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced carrot and green bell pepper, cooking for about 3-4 minutes until they start to soften.
  3. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add the frozen peas and cooked rice to the skillet, mixing well to combine with the vegetables.
