Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1/2 cup, diced
  • Green peas - 1/2 cup, frozen
  • Soy sauce - 2 tablespoons
  • Egg - 1 large, beaten
  • Green onions - 2, sliced
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then combine it with 2 cups of water in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for about 25 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  2. In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced carrot and bell pepper to the skillet and cook for about 3-4 minutes until they start to soften.
  4. Stir in the frozen green peas and cook for another 2 minutes.
  5. Push the vegetables to one side of the skillet, pour the beaten egg into the other side, and scramble it until fully cooked.
  6. Add the cooked brown rice to the skillet, along with the soy sauce, salt, and black pepper. Mix everything together and cook for an additional 2-3 minutes, stirring frequently to combine all the ingredients.
  7. Remove from heat and sprinkle with sliced green onions before serving.
