  • Whole grain baguette - 2 slices
  • Low-fat cheese (like mozzarella) - 30 grams, shredded

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the sliced onions and sauté for about 20 minutes, stirring occasionally, until the onions are caramelized and golden brown.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the vegetable broth and bring to a simmer. Add the dried thyme, bay leaf, salt, and black pepper. Let it simmer for 15 minutes, allowing the flavors to meld.
