  • Granulated sugar - 50 grams
  • Large eggs - 2
  • Vanilla extract - 1 teaspoon
  • Cocoa powder (unsweetened) - 15 grams

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small round cake pan (about 15 cm in diameter) with butter or line it with parchment paper.
  2. In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water (double boiler method), stirring until smooth and combined.
  3. Remove the bowl from heat and let it cool slightly before adding granulated sugar, mixing until well incorporated.
  4. Add the eggs one at a time, stirring well after each addition, then mix in the vanilla extract.
  5. Sift in the cocoa powder and a pinch of salt, folding gently until just combined and no dry ingredients remain.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for about 20-25 minutes, or until the edges are set and the center is slightly jiggly.
  8. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
