  • Key lime juice - 60 ml
  • Sweetened condensed milk - 200 g
  • Egg yolks - 2 large
  • Coconut flour - 60 g
  • Unsweetened shredded coconut - 50 g
  • Butter - 30 g (melted)
  • Honey - 15 g
  • Egg white - 1 large
  • Salt - a pinch

Steps

  1. Preheat your oven to 175°C (350°F).
  2. In a mixing bowl, combine the coconut flour, shredded coconut, melted butter, honey, and a pinch of salt to form the crust mixture.
  3. Press the mixture firmly into the bottom and up the sides of a small pie dish to create a crust.
  4. Bake the crust in the preheated oven for 10-12 minutes until golden brown. Remove and let cool slightly.
  5. In another bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth.
  6. In a separate bowl, beat the egg white until soft peaks form, then gently fold it into the key lime mixture.
  7. Pour the filling into the cooled crust and smooth the top with a spatula.
  8. Bake for an additional 15 minutes until the filling is set but still slightly jiggly in the center.
  9. Remove from the oven and allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before serving.
