- Prunes - 100 grams, pitted and chopped
- Honey - 2 tablespoons
- Olive oil - 1 tablespoon
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 250 milliliters
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste

Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the sliced carrots and cubed sweet potato to the skillet, stirring to combine. Cook for about 5 minutes until the vegetables begin to soften.
- Stir in the chopped prunes, honey, cinnamon, salt, and pepper. Pour in the vegetable broth and bring the mixture to a simmer.
- Place the fish fillets on top of the vegetable mixture in the skillet. Cover the skillet with a lid or foil, and transfer it to the preheated oven.
