- Green plantains - 2 (about 500g)
- Fresh white fish fillets (like tilapia or cod) - 200g
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1/2, sliced
Steps
- Peel the green plantains and cut them into 1-inch thick slices.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the plantain slices and fry for about 3-4 minutes on each side until golden brown.
- Remove the plantains from the skillet and place them on a paper towel to drain excess oil. Using a flat surface, gently smash each slice to about 1/2 inch thickness.
- Return the smashed plantains to the skillet, adding another tablespoon of olive oil if necessary, and fry them for another 2-3 minutes on each side until crispy. Remove and set aside.
- In a bowl, combine the fish fillets with garlic powder, cumin, paprika, salt, and black pepper. Drizzle with lime juice and let marinate for about 10 minutes.
- In the same skillet, grill the marinated fish for about 3-4 minutes on each side until fully cooked and flaky.
- Slice the grilled fish into bite-sized pieces and arrange them on top of the crispy tostones.
- Garnish with chopped cilantro and avocado slices before serving.
