Ingredients

  • Green plantains - 2 (about 500g)
  • Fresh white fish fillets (like tilapia or cod) - 200g
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1, juiced
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1/2, sliced

Steps

  1. Peel the green plantains and cut them into 1-inch thick slices.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the plantain slices and fry for about 3-4 minutes on each side until golden brown.
  3. Remove the plantains from the skillet and place them on a paper towel to drain excess oil. Using a flat surface, gently smash each slice to about 1/2 inch thickness.
  4. Return the smashed plantains to the skillet, adding another tablespoon of olive oil if necessary, and fry them for another 2-3 minutes on each side until crispy. Remove and set aside.
  5. In a bowl, combine the fish fillets with garlic powder, cumin, paprika, salt, and black pepper. Drizzle with lime juice and let marinate for about 10 minutes.
  6. In the same skillet, grill the marinated fish for about 3-4 minutes on each side until fully cooked and flaky.
  7. Slice the grilled fish into bite-sized pieces and arrange them on top of the crispy tostones.
  8. Garnish with chopped cilantro and avocado slices before serving.
