- Olive oil - 2 tablespoons
- Fresh lemon juice - 1 tablespoon
- Garlic cloves - 2, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
- Red onion - 1 small, cut into wedges

- Fresh parsley - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
- Cut the fish fillets into 2.5 cm (1 inch) cubes and add them to the marinade. Toss to coat evenly and let marinate for 15 minutes.
- While the fish is marinating, soak wooden skewers in water for 10 minutes to prevent burning.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated fish cubes, cherry tomatoes, and red onion wedges alternately onto the soaked skewers.
- Grill the skewers for 8-10 minutes, turning occasionally, until the fish is cooked through and flakes easily with a fork.

- Serve the fish souvlaki in the warm pita, garnished with fresh parsley.
