  • White fish fillets (such as cod or halibut) - 300 grams
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 1 tablespoon
  • Garlic cloves - 2, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, cut into wedges
  • Pita bread - 2 pieces
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
  2. Cut the fish fillets into 2.5 cm (1 inch) cubes and add them to the marinade. Toss to coat evenly and let marinate for 15 minutes.
  3. While the fish is marinating, soak wooden skewers in water for 10 minutes to prevent burning.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated fish cubes, cherry tomatoes, and red onion wedges alternately onto the soaked skewers.
  6. Grill the skewers for 8-10 minutes, turning occasionally, until the fish is cooked through and flakes easily with a fork.
  7. Warm the pita bread on the grill for 1-2 minutes on each side.
  8. Serve the fish souvlaki in the warm pita, garnished with fresh parsley.
