  • Cornmeal - 50 grams
  • Egg - 1 large
  • Milk - 100 ml
  • Paprika - 1 teaspoon

  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - for frying
  • French baguette - 2 pieces (about 15 cm each)
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Pickles - 4 slices
  • Mayonnaise - 50 grams
  • Dijon mustard - 1 teaspoon
  • Hot sauce - to taste

Steps

  1. Begin by preparing the fish: Rinse the fillets under cold water and pat them dry with paper towels.
  2. In a shallow bowl, whisk together the flour, cornmeal, paprika, garlic powder, salt, and black pepper.
  3. In another bowl, beat the egg and mix in the milk.
  4. Dip each fish fillet first into the egg mixture, then dredge it in the flour mixture, ensuring an even and thorough coating.
  5. Heat vegetable oil in a deep skillet over medium-high heat until hot (about 180°C).
  6. Carefully add the coated fish fillets to the hot oil and fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
  7. While the fish is frying, prepare the remoulade by mixing mayonnaise, Dijon mustard, and hot sauce in a small bowl.
  8. Slice the baguettes in half lengthwise and toast them lightly if desired.
  9. To assemble the Po' Boys, spread the remoulade on both sides of the toasted baguette, layer with lettuce, tomato slices, pickles, and finally, add the crispy fish fillets.
  10. Close the sandwich and serve immediately with extra remoulade on the side.
