- Unsalted margarine - 2 tablespoons
- Garlic, minced - 2 cloves
- Lemon juice - 3 tablespoons
- Vegetable broth - 1/2 cup
- Capers - 2 tablespoons, rinsed
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the fish fillets under cold water and pat them dry with paper towels.
- In a shallow dish, mix the flour, salt, and black pepper together.
- Dredge each fish fillet in the flour mixture, shaking off any excess.
- In a large skillet, heat the olive oil and margarine over medium heat until melted and hot.
- Add the fish fillets to the skillet and cook for about 3-4 minutes per side, or until golden brown and cooked through. Remove the fish from the skillet and set aside on a plate.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the lemon juice and vegetable broth, scraping up any browned bits from the bottom of the skillet.
- Add the capers and bring the sauce to a simmer, allowing it to reduce slightly for about 2-3 minutes.
- Return the fish fillets to the skillet, spooning the sauce over them to heat through for another minute.
