Ingredients

  • White fish fillets (such as sole or tilapia) - 300 grams
  • All-purpose flour - 1/4 cup
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Unsalted margarine - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Lemon juice - 3 tablespoons
  • Vegetable broth - 1/2 cup
  • Capers - 2 tablespoons, rinsed
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the fish fillets under cold water and pat them dry with paper towels.
  2. In a shallow dish, mix the flour, salt, and black pepper together.
  3. Dredge each fish fillet in the flour mixture, shaking off any excess.
  4. In a large skillet, heat the olive oil and margarine over medium heat until melted and hot.
  5. Add the fish fillets to the skillet and cook for about 3-4 minutes per side, or until golden brown and cooked through. Remove the fish from the skillet and set aside on a plate.
  6. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  7. Pour in the lemon juice and vegetable broth, scraping up any browned bits from the bottom of the skillet.
  8. Add the capers and bring the sauce to a simmer, allowing it to reduce slightly for about 2-3 minutes.
  9. Return the fish fillets to the skillet, spooning the sauce over them to heat through for another minute.
