  • Zucchini - 1 medium

  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. Cut the fish fillets into 2.5 cm cubes and set aside.
  2. Chop the red and yellow bell peppers, zucchini, and red onion into 2.5 cm pieces.
  3. In a bowl, mix olive oil, lemon juice, minced garlic, chopped parsley, salt, black pepper, and ground cumin to create a marinade.
  4. Add the fish cubes to the marinade and let them sit for 10 minutes.
  5. Preheat the grill or grill pan over medium heat.
  6. Thread the marinated fish and chopped vegetables onto the soaked skewers, alternating between fish and veggies.
  7. Place the skewers on the grill and cook for 3-4 minutes on each side or until the fish is cooked through and flakes easily.
