- Cod fillets - 200 grams, diced
- Shrimp - 100 grams, peeled and deveined
- Bacon - 2 slices, chopped
- Butter - 1 tablespoon
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Celery - 1 stalk, diced
- Cauliflower florets - 200 grams
- Fish stock - 500 ml
- Heavy cream - 100 ml
- Dill - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Paprika - 1/2 teaspoon
Steps
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add butter to the pot, then sauté the onion, garlic, and celery until softened, about 5 minutes.
- Stir in the cauliflower florets and cook for another 3 minutes, stirring frequently.
- Pour in the fish stock and bring to a simmer. Cook for about 10 minutes until the cauliflower is tender.
- Using an immersion blender, puree the chowder until smooth, or transfer to a blender in batches.
- Return the pureed chowder to the pot over low heat and stir in the heavy cream, diced cod, and shrimp.
- Add dill, paprika, salt, and pepper. Cook for an additional 5-7 minutes until the seafood is cooked through.
- Serve hot, garnished with crispy bacon and additional dill if desired.
