Ingredients

  • Cod fillets - 200 grams, diced
  • Shrimp - 100 grams, peeled and deveined
  • Bacon - 2 slices, chopped
  • Butter - 1 tablespoon
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Cauliflower florets - 200 grams
  • Fish stock - 500 ml
  • Heavy cream - 100 ml
  • Dill - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1/2 teaspoon

Steps

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add butter to the pot, then sauté the onion, garlic, and celery until softened, about 5 minutes.
  3. Stir in the cauliflower florets and cook for another 3 minutes, stirring frequently.
  4. Pour in the fish stock and bring to a simmer. Cook for about 10 minutes until the cauliflower is tender.
  5. Using an immersion blender, puree the chowder until smooth, or transfer to a blender in batches.
  6. Return the pureed chowder to the pot over low heat and stir in the heavy cream, diced cod, and shrimp.
  7. Add dill, paprika, salt, and pepper. Cook for an additional 5-7 minutes until the seafood is cooked through.
  8. Serve hot, garnished with crispy bacon and additional dill if desired.
