- White fish fillets (such as cod or tilapia) - 250 grams
- Zucchini - 2 medium-sized
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 20 grams, grated (optional)
Steps
- Using a spiralizer, create zucchini noodles from the zucchini. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the fish fillets to the skillet and season with salt and black pepper. Cook for about 3-4 minutes on each side until the fish is opaque and flakes easily with a fork. Remove fish and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and cherry tomatoes. Sauté for 2-3 minutes until the tomatoes start to soften.
- Add the zucchini noodles to the skillet and toss gently with the tomatoes for about 2-3 minutes until slightly tender.
- Return the fish to the skillet, drizzle with lemon juice, and sprinkle with chopped basil. Cook for an additional minute to heat through.
- Serve immediately, garnished with grated Parmesan cheese if desired.
