Ingredients

  • White fish fillets (such as cod or tilapia) - 250 grams
  • Zucchini - 2 medium-sized
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 20 grams, grated (optional)

Steps

  1. Using a spiralizer, create zucchini noodles from the zucchini. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the fish fillets to the skillet and season with salt and black pepper. Cook for about 3-4 minutes on each side until the fish is opaque and flakes easily with a fork. Remove fish and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil and cherry tomatoes. Sauté for 2-3 minutes until the tomatoes start to soften.
  5. Add the zucchini noodles to the skillet and toss gently with the tomatoes for about 2-3 minutes until slightly tender.
  6. Return the fish to the skillet, drizzle with lemon juice, and sprinkle with chopped basil. Cook for an additional minute to heat through.
  7. Serve immediately, garnished with grated Parmesan cheese if desired.
