Ingredients

  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes into bite-sized pieces, and place them on a baking sheet.
  3. Drizzle 1 tablespoon of olive oil over the sweet potatoes and season with salt, black pepper, and paprika. Toss to coat evenly.
  4. Roast the sweet potatoes in the preheated oven for 20 minutes or until tender and slightly caramelized.
