Ingredients

  • Cod fillets - 300 grams
  • All-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Baking powder - 1 teaspoon
  • Cold sparkling water - 150 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Potatoes - 400 grams
  • Vegetable oil - for frying
  • Lemon wedges - for serving
  • Tartar sauce - for serving

Steps

  1. Peel the potatoes and cut them into thick fries. Rinse them in cold water and pat dry.
  2. In a large pot, heat vegetable oil to 180°C (350°F) for frying the chips.
  3. Fry the potatoes in batches for about 5-7 minutes until they are tender but not browned. Remove and drain on paper towels.
  4. In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth.
  5. In the same pot, increase the oil temperature to 190°C (375°F). Dip each cod fillet into the batter, allowing excess to drip off, and carefully place it into the hot oil.
  6. Fry the cod for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
  7. Return the partially cooked fries to the hot oil and fry for an additional 3-4 minutes until golden and crispy.
  8. Serve the fish and chips hot with lemon wedges and tartar sauce on the side.
