- Cod fillets - 300 grams
- All-purpose flour - 100 grams
- Cornstarch - 50 grams
- Baking powder - 1 teaspoon
- Cold sparkling water - 150 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Potatoes - 400 grams
- Vegetable oil - for frying
- Lemon wedges - for serving
- Tartar sauce - for serving
Steps
- Peel the potatoes and cut them into thick fries. Rinse them in cold water and pat dry.
- In a large pot, heat vegetable oil to 180°C (350°F) for frying the chips.
- Fry the potatoes in batches for about 5-7 minutes until they are tender but not browned. Remove and drain on paper towels.
- In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth.
- In the same pot, increase the oil temperature to 190°C (375°F). Dip each cod fillet into the batter, allowing excess to drip off, and carefully place it into the hot oil.
- Fry the cod for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
- Return the partially cooked fries to the hot oil and fry for an additional 3-4 minutes until golden and crispy.
- Serve the fish and chips hot with lemon wedges and tartar sauce on the side.
