Ingredients

  • Fettuccine pasta - 150 grams
  • Low-fat Greek yogurt - 100 grams
  • Parmesan cheese, grated - 30 grams
  • Garlic, minced - 2 cloves
  • Olive oil - 1 tablespoon
  • Vegetable broth - 100 ml
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Cook the fettuccine pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the vegetable broth to the skillet and bring to a simmer. Reduce heat and stir in the Greek yogurt, mixing until smooth.
  4. Gradually add the grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.
  5. Season the sauce with black pepper and salt to taste. Toss the cooked fettuccine in the sauce until well coated.
  6. Serve hot, garnished with chopped fresh parsley.
