- Vegetable broth - 100 ml
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Fresh parsley, chopped - 2 tablespoons
Steps
- Cook the fettuccine pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the vegetable broth to the skillet and bring to a simmer. Reduce heat and stir in the Greek yogurt, mixing until smooth.
- Gradually add the grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.
