Ingredients

  • Fettuccine - 200 grams
  • Unsalted butter - 50 grams
  • Heavy cream - 120 ml
  • Parmesan cheese, grated - 60 grams
  • Garlic, minced - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper, freshly ground - 1/4 teaspoon
  • Parsley, chopped - 1 tablespoon

Steps

  1. Bring a large pot of salted water to boil. Add the fettuccine and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the heavy cream and bring to a gentle simmer, stirring frequently. Cook for 3-4 minutes until the cream thickens slightly.
  4. Reduce the heat to low and gradually add the grated Parmesan cheese, stirring continuously until the cheese is melted and the sauce is smooth.
  5. Once the fettuccine is cooked, reserve 1/2 cup of pasta water, then drain the pasta. Add the drained fettuccine to the skillet with the Alfredo sauce.
  6. Toss the pasta in the sauce, adding reserved pasta water a little at a time until desired consistency is reached. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with chopped parsley and extra Parmesan cheese if desired.
