Ingredients

  • Farro pasta - 150 grams
  • Broccoli florets - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red pepper flakes - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the farro pasta according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant.
  3. Add the broccoli florets to the skillet and sauté for about 5-7 minutes until they are tender but still bright green.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta and add it to the skillet with the broccoli.
  5. Stir in the lemon juice, grated Parmesan cheese, and season with salt and black pepper to taste. If the mixture seems dry, add a bit of the reserved pasta cooking water to achieve the desired consistency.
  6. Toss everything together until well combined and heated through, then serve immediately, garnished with additional Parmesan if desired.
