Ingredients
- Farro pasta - 150 grams
- Broccoli florets - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red pepper flakes - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and cook the farro pasta according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant.
- Add the broccoli florets to the skillet and sauté for about 5-7 minutes until they are tender but still bright green.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta and add it to the skillet with the broccoli.
- Stir in the lemon juice, grated Parmesan cheese, and season with salt and black pepper to taste. If the mixture seems dry, add a bit of the reserved pasta cooking water to achieve the desired consistency.
- Toss everything together until well combined and heated through, then serve immediately, garnished with additional Parmesan if desired.
