- Chickpeas - 400 grams (canned or soaked and cooked)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
- Pita bread - 2 pieces
- Lettuce - 50 grams, shredded
- Tomato - 1 medium, diced
- Cucumber - 1 medium, diced
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a food processor, combine the chickpeas, chopped onion, minced garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Blend until the mixture is coarse but well combined.
- Transfer the mixture to a bowl and refrigerate for 15 minutes to firm up.
- Heat olive oil in a frying pan over medium heat.
- Form the chickpea mixture into small patties, about the size of a golf ball, and flatten them slightly.
- Fry the patties in the hot oil for about 3-4 minutes on each side, or until golden brown and crispy. Drain on paper towels.
- In a small bowl, mix tahini with lemon juice and a little water to achieve a drizzling consistency.
- To assemble the wraps, place a few falafel patties on a pita bread, top with shredded lettuce, diced tomato, and cucumber, and drizzle with tahini sauce.
- Wrap the pita around the fillings, and serve immediately.
