Ingredients

  • Chickpeas - 400 grams (canned or soaked and cooked)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying
  • Pita bread - 2 pieces
  • Lettuce - 50 grams, shredded
  • Tomato - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a food processor, combine the chickpeas, chopped onion, minced garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Blend until the mixture is coarse but well combined.
  2. Transfer the mixture to a bowl and refrigerate for 15 minutes to firm up.
  3. Heat olive oil in a frying pan over medium heat.
  4. Form the chickpea mixture into small patties, about the size of a golf ball, and flatten them slightly.
  5. Fry the patties in the hot oil for about 3-4 minutes on each side, or until golden brown and crispy. Drain on paper towels.
  6. In a small bowl, mix tahini with lemon juice and a little water to achieve a drizzling consistency.
  7. To assemble the wraps, place a few falafel patties on a pita bread, top with shredded lettuce, diced tomato, and cucumber, and drizzle with tahini sauce.
  8. Wrap the pita around the fillings, and serve immediately.
