- Chickpeas (dried) - 100 grams
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Flour (all-purpose) - 2 tablespoons
- Vegetable oil (for frying) - 500 ml
- Tahini - 3 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
- Salt (for tahini sauce) - pinch
Steps
- Soak the dried chickpeas in water for at least 8 hours or overnight. Drain and rinse them before use.
- In a food processor, combine the soaked chickpeas, chopped onion, minced garlic, parsley, cumin, coriander, salt, black pepper, baking powder, and flour. Blend until the mixture is coarse but holds together when shaped.
- Form the chickpea mixture into small patties or balls, about 2.5 cm in diameter.
- Heat the vegetable oil in a deep frying pan over medium heat. Once hot, carefully add the falafel patties in batches, frying for about 4-5 minutes on each side or until golden brown and crispy.
- Using a slotted spoon, transfer the fried falafel to a plate lined with paper towels to drain excess oil.
- In a small bowl, whisk together tahini, lemon juice, water, and a pinch of salt until smooth. Adjust the consistency with more water if necessary.
- Serve the falafel warm with tahini sauce drizzled on top, and enjoy with a side of fresh salad or pita bread.
