- Canned chickpeas - 240 grams (1 cup)
- Fresh parsley - 30 grams (1 cup, chopped)
- Fresh cilantro - 30 grams (1 cup, chopped)
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 2 tablespoons
- Baking powder - 1/2 teaspoon
- Vegetable oil - for frying
- Mixed salad greens - 100 grams (4 cups)
- Cherry tomatoes - 150 grams (1 cup, halved)
- Cucumber - 1 medium, diced
- Red onion - 50 grams (1/4, thinly sliced)
- Tahini - 2 tablespoons
- Lemon juice - 2 tablespoons
- Water - 2 tablespoons
- Olive oil - 1 tablespoon
Steps
- Drain and rinse the canned chickpeas, then place them in a food processor.
- Add parsley, cilantro, garlic, cumin, coriander, salt, black pepper, flour, and baking powder to the food processor.
- Pulse the mixture until coarse and well-combined but not pureed. Form the mixture into small balls, about the size of a golf ball.
- Heat vegetable oil in a frying pan over medium heat. Fry the falafel balls for about 3-4 minutes on each side until golden brown and crispy. Drain on paper towels.
- In a bowl, combine mixed salad greens, cherry tomatoes, cucumber, and red onion.
- In a separate small bowl, whisk together tahini, lemon juice, water, and olive oil until smooth. Adjust consistency with water if needed.
- Divide the salad mixture onto two plates, top with falafel balls, and drizzle with tahini dressing before serving.
