- Garlic - 2 cloves, minced

- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
- Pita bread - 2 pieces
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Lettuce - 2 leaves, shredded
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Soak the dried chickpeas in water overnight. Drain and rinse before use.
- In a food processor, combine the soaked chickpeas, minced garlic, chopped onion, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.
- Form the chickpea mixture into small patties, about the size of a golf ball, then flatten them slightly.
- Heat olive oil in a frying pan over medium heat. Fry the falafel patties for about 4-5 minutes on each side, or until they are golden brown and crispy.
- While the falafel cooks, prepare the tahini sauce by mixing tahini, lemon juice, and a little water until smooth. Adjust the water for desired consistency.
- Warm the pita bread in a dry pan or microwave for a few seconds until soft.
- Assemble the sandwich by placing 2-3 falafel patties in each pita, and topping with diced tomato, cucumber, shredded lettuce, and a drizzle of tahini sauce.
