Ingredients

  • Dried chickpeas - 100 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying
  • Pita bread - 2 pieces
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Lettuce - 2 leaves, shredded
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Soak the dried chickpeas in water overnight. Drain and rinse before use.
  2. In a food processor, combine the soaked chickpeas, minced garlic, chopped onion, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.
  3. Form the chickpea mixture into small patties, about the size of a golf ball, then flatten them slightly.
  4. Heat olive oil in a frying pan over medium heat. Fry the falafel patties for about 4-5 minutes on each side, or until they are golden brown and crispy.
  5. While the falafel cooks, prepare the tahini sauce by mixing tahini, lemon juice, and a little water until smooth. Adjust the water for desired consistency.
  6. Warm the pita bread in a dry pan or microwave for a few seconds until soft.
  7. Assemble the sandwich by placing 2-3 falafel patties in each pita, and topping with diced tomato, cucumber, shredded lettuce, and a drizzle of tahini sauce.
