- Chickpeas - 200 grams (cooked and drained)
- Fresh parsley - 30 grams (chopped)
- Fresh cilantro - 30 grams (chopped)
- Garlic - 2 cloves (minced)
- Onion - 1 small (finely chopped)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- All-purpose flour - 40 grams
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium (sliced)
- Cucumber - 1/2 (sliced)
- Tahini sauce - 4 tablespoons
Steps
- In a food processor, combine cooked chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, salt, pepper, and baking powder. Pulse until the mixture is coarse yet holds together.
- Transfer the mixture to a bowl and stir in the flour. Form the mixture into 2 patties.
- Heat olive oil in a frying pan over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, toast the burger buns lightly on another pan or in a toaster.
- Assemble the burger by placing a lettuce leaf on the bottom bun, followed by the falafel patty, sliced tomato, cucumber, and a generous drizzle of tahini sauce. Top with the other half of the bun.
- Serve immediately with your choice of side.
