- Whole wheat pita bread - 2 pieces

- Tomato - 1, diced
- Red onion - 1/4, thinly sliced
- Spinach - 1 cup, fresh
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F) and bake the falafel according to package instructions until crispy, usually about 15-20 minutes.
- While the falafel is baking, prepare the tahini sauce by mixing tahini, lemon juice, minced garlic, olive oil, salt, and black pepper in a bowl until smooth.
- In a separate bowl, combine diced cucumber, tomato, and red onion. Season with a pinch of salt and mix well.
- Once the falafel is baked, warm the whole wheat pita bread in the oven for 2-3 minutes.
