Ingredients

  • Falafel - 8 pieces
  • Whole wheat pita bread - 2 pieces
  • Cucumber - 1/2, diced
  • Tomato - 1, diced
  • Red onion - 1/4, thinly sliced
  • Spinach - 1 cup, fresh
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F) and bake the falafel according to package instructions until crispy, usually about 15-20 minutes.
  2. While the falafel is baking, prepare the tahini sauce by mixing tahini, lemon juice, minced garlic, olive oil, salt, and black pepper in a bowl until smooth.
  3. In a separate bowl, combine diced cucumber, tomato, and red onion. Season with a pinch of salt and mix well.
