Ingredients
- Dried chickpeas - 100 grams
- Garlic - 2 cloves
- Onion - 1 small, chopped
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- All-purpose flour - 2 tablespoons
- Water - 100 ml
- Vegetable oil - for frying
Steps
- Soak the dried chickpeas in water overnight, then drain and rinse them.
- In a food processor, combine the soaked chickpeas, garlic, onion, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until coarsely blended.
- Transfer the mixture to a bowl and stir in the flour and water until well combined. If the mixture is too wet, add more flour as needed.
- Shape the mixture into small balls or patties, about 2.5 cm in diameter.
- Heat vegetable oil in a deep pan over medium heat. Once the oil is hot, carefully add the falafel balls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
- Remove the falafel from the oil and drain on paper towels. Serve warm with tahini sauce or your favorite dipping sauce.
