Ingredients

  • Dried chickpeas - 100 grams
  • Garlic - 2 cloves
  • Onion - 1 small, chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • All-purpose flour - 2 tablespoons
  • Water - 100 ml
  • Vegetable oil - for frying

Steps

  1. Soak the dried chickpeas in water overnight, then drain and rinse them.
  2. In a food processor, combine the soaked chickpeas, garlic, onion, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until coarsely blended.
  3. Transfer the mixture to a bowl and stir in the flour and water until well combined. If the mixture is too wet, add more flour as needed.
  4. Shape the mixture into small balls or patties, about 2.5 cm in diameter.
  5. Heat vegetable oil in a deep pan over medium heat. Once the oil is hot, carefully add the falafel balls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
  6. Remove the falafel from the oil and drain on paper towels. Serve warm with tahini sauce or your favorite dipping sauce.
