- Black beans, drained and rinsed - 1/2 cup

- Reduced-fat shredded cheddar cheese - 1/2 cup

- Fresh cilantro, chopped (for garnish) - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add diced onion and red bell pepper, sautéing until they are soft, about 5 minutes.
- Stir in minced garlic and cook for an additional 1 minute.
- Add the ground turkey to the skillet, cooking until browned, approximately 6-7 minutes. Season with chili powder, cumin, salt, and black pepper.
- Add the black beans and canned tomatoes to the skillet, stirring to combine. Simmer for 5 minutes.
- In a baking dish, layer two corn tortillas on the bottom. Spoon half of the turkey mixture over the tortillas and sprinkle with half of the cheddar cheese.
- Repeat the layering process with the remaining tortillas, turkey mixture, and cheese.
- Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
