- Coconut milk - 100 ml

- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Chopped parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.
- Add the elderberries and broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes, allowing the flavors to meld and the elderberries to soften.
- Using an immersion blender, puree the soup until smooth. You can also transfer the mixture to a blender, but be cautious with the hot liquid.
- Stir in the coconut milk, fresh thyme, salt, black pepper, and lemon juice. Simmer for an additional 5 minutes to heat through.
