- Dried elderberries - 50 grams
- Carrots - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Beef or game stock - 500 ml
- Fresh thyme - 1 teaspoon, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Bay leaf - 1
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced game meat to the pot, and brown it on all sides, about 5-7 minutes.
- Stir in the diced carrots and celery, cooking for another 3-4 minutes until they start to soften.
- Add the dried elderberries, beef or game stock, chopped thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a simmer.
- Cover the pot and let the soup simmer for 25-30 minutes, allowing the flavors to meld and the game meat to become tender.
- Remove the bay leaf before serving. Adjust seasoning if necessary, and serve hot.
