- Fresh spinach - 200 grams
- Eggs - 4 large
- Butter - 50 grams
- Lemon juice - 1 tablespoon
- Egg yolks - 2 large
- Salt - to taste
- Black pepper - to taste
- Paprika - a pinch
- Water - 1 liter
Steps
- In a large pan, melt 25 grams of butter over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper.
- While the spinach is cooking, prepare the hollandaise sauce. In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water, ensuring the bowl doesn't touch the water.
- Gradually add the remaining butter (25 grams) to the egg yolk mixture, whisking continuously until the sauce thickens and becomes creamy. Season with salt, pepper, and paprika. Remove from heat and set aside.
- Bring a pot of water to a gentle simmer and add a splash of vinegar (optional). Crack the eggs into individual small bowls.
- Gently slide the eggs into the simmering water, poaching for about 3-4 minutes for soft yolks. Remove the eggs with a slotted spoon and drain on a paper towel.
- To serve, place a portion of sautéed spinach on each plate, top with two poached eggs, and drizzle with the hollandaise sauce.
