  • Eggplant - 1 medium

  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 1/2 cup
  • Mozzarella cheese - 1 cup, shredded
  • Parmesan cheese - 1/4 cup, grated
  • Italian seasoning - 1 teaspoon
  • Fresh basil leaves - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1/2-inch thick rounds and place them on a baking sheet.
  3. Drizzle olive oil over the eggplant slices and sprinkle with salt and black pepper.
  4. Roast the eggplant in the preheated oven for 15 minutes until tender and slightly golden.
