Ingredients
- Eggplant - 1 medium-sized (about 250g)
- Salt - 1 teaspoon
- All-purpose flour - 1/2 cup (60g)
- Egg - 1 large
- Bread crumbs - 1 cup (100g)
- Olive oil - 4 tablespoons
- Marinara sauce - 1 cup (240ml)
- Mozzarella cheese - 200g, shredded
- Parmesan cheese - 50g, grated
- Fresh basil leaves - a handful, for garnish
Steps
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for about 20 minutes to draw out moisture and bitterness.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- Set up a breading station: Place the flour in one bowl, beat the egg in another bowl, and place the bread crumbs in a third bowl.
- Dredge each eggplant slice in flour, dip it into the beaten egg, and then coat it with bread crumbs.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown, about 3-4 minutes per side. Add more oil as needed.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the fried eggplant slices, followed by half of the marinara sauce, and half of the mozzarella cheese. Repeat the layers with the remaining ingredients.
- Top with grated Parmesan cheese.
- Bake in a preheated oven at 180°C (350°F) for 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
