Ingredients

  • 1 medium eggplant - sliced into 1 cm rounds
  • 1 cup all-purpose flour
  • 2 large eggs - beaten
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 200 grams fresh mozzarella cheese - sliced
  • 4 tablespoons grated Parmesan cheese
  • 2 ciabatta rolls
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
  2. Set up a breading station by placing the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs mixed with garlic powder, Italian seasoning, salt, and pepper in a third dish.
  3. Dip each eggplant slice into the flour, shaking off the excess, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown, about 3-4 minutes per side. Add more oil as needed.
  5. Once browned, transfer the eggplant to a baking sheet and top each slice with marinara sauce, mozzarella cheese, and a sprinkle of Parmesan cheese.
  6. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
  7. While the eggplant is baking, slice the ciabatta rolls in half and toast them lightly in a toaster or on a skillet.
  8. Assemble the sandwiches by placing the baked eggplant on the bottom half of each ciabatta roll, adding more marinara sauce if desired, and topping with fresh basil leaves before placing the top half of the roll.
  9. Serve immediately and enjoy your delicious Eggplant Parmesan Sandwich!
