Steps
- Preheat the oven to 220°C (428°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture, then rinse and pat dry.
- In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the eggplant slices and cook for 3-4 minutes on each side until golden brown. Remove and set aside.
- Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza stone or baking sheet lined with parchment paper.
