Ingredients

  • Eggplant - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ricotta cheese - 200 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Parmesan cheese (grated) - 50 grams
  • Marinara sauce (sugar-free) - 200 grams
  • Garlic powder - 1 teaspoon
  • Italian seasoning - 1 teaspoon
  • Fresh basil (for garnish) - a few leaves

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 0.5 cm thick slices and sprinkle with salt. Let it sit for 15 minutes to draw out moisture, then rinse and pat dry.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the eggplant slices in batches and cook for about 3-4 minutes on each side until golden brown. Set aside.
  4. In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  5. In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer with eggplant slices, followed by a layer of the ricotta mixture, and another layer of marinara sauce. Repeat the layers, finishing with eggplant and a generous topping of the remaining mozzarella cheese.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  7. Remove from the oven and let it sit for 5-10 minutes before slicing. Garnish with fresh basil before serving.
